Pan-Roasted Salmon-and-Bread Salad

Okay, I have tried, and I have tried, but unless I drench a salad with tons of creamy dressing and fill it up with meat, I just don’t enjoy it.  If I do drench it with dressing and meat, that defeats the purpose of trying to eat healthier, and I may as well be eating pizza like I want to.  But now I’ve come across a salad that is both healthy (note the salmon - very good for you!) and tastes good too!  Check it out:

Spinach and Cheese Stuffed Shells

What could be better than Monday morning italian?  Monday is pasta day around my house – don’t ask me why, I don’t usually have certain types of meals on certain days, but for a long time I just happened to eat some type of pasta for dinner on Monday night, and then I decided to make it into a habit and here we are!  Today I’m going to try these stuffed shells.  They work perfectly because they fit my Monday pasta requirement and my new vegetable with every dinner requirement!  Give them a try and see if they’re as good as they look.

Chicken with Lemony Egg Noodles and Peas

Okay, I must confess – I don’t like to eat my veggies.  I do try, but it’s difficult.  Sooo, I’ve been trying to purchase groceries that would make me more likely to eat veggies instead of processed junk.  In honor of this change, I’d like to share this chicken and noodles and peas (veggie alert!) recipe with you, which for me kills 2 birds with one stone.  I get in a serving or so of vegetables, and I get to use up some of the rotisserie chicken I bought to help me eat more salads! (One can only eat so much rotisserrie chicken and salads ya know.)  So, if this recipe looks good to you guys too, give it a try and tell me what you think!

Louisville Hot Brown

Perhaps I’ve mentioned to you guys a time or two  that I’m a little ole yankee gal living in the south these days.  This being the case, I feel obligated to try all of the great southern recipes that I come across in order to feel closer to my new friends and neighbors (sounds better than just saying I’m greedy and love food doesn’t it?)  So, I’ve been hearing a lot about the ‘Louisville Hot Brown’ sandwich and it sounds like my type of party.  It’s hard to go wrong with any recipe involving bread, meat, and gravy so try this one out and you won’t go wrong.  Look at that picture – yummmmmm!!

Strawberry-Black Pepper Tart for Two

For some strange reason, I’ve been having these strong, repeated cravings for strawberry tart.  I keep coming across different recipes, seeing pictures, and watching t.v. shows where people are eating yummy strawberry confections.  I can’t lie – there’s not too much you can do to turn me away from strawberries and sugar wrapped in somebody’s version of a pie dough.  In light of this new obsession of mine, I’ve been coming across lots of recipes for this type of thing lately and want to share one with you that I’ve recently tried.  Ummm, and it’s good too!  (A little ice cream or whipped cream never hurts either!  Check this one out and tell me what you think.

Red Velvet Cupcakes

Well, you know how they say misery loves company right?  I’m finding that to be especially true today since this past weekend of culinary indulgences have left me a few pounds heavier when I stepped on the scale this morning.  In honor of this misery, I figured I’d try to sabotage you all as well by providing a yummy, sweet, calorie laden temptation so that you all can share my feelings of over-indulgence.  I’m not sharing this recipe so that you can make a dozen and eat only one – oooh nooo, that is not the point of this exercise.  If you make them you’ve got to eat lots and lots of them (similar to how I behaved when I had fried chicken, fried fish, pizza, strawberry tart and a burger all in the same day – and no, I wasn’t at a buffet restaurant).  Sooo, while I sweat it out over multiple aerobics tapes this week I’ll be thinking about all of you enjoying sweet treats like this one.  Have one for me – I’m in dessert detox this week!

Roasted Fall Vegetable and Ricotta Pizza

Mmmm, I am a confirmed, hardcore, un-reformable (is that a word?) pizza addict.  As in – ‘My name is Joy and I’m a pizzaholic’ type of pizza addict.  Like no diet, 12 step program, or lack of funds can stop me from my pizza fix.  Yeah – one of those type of people.  That being said, I’m sure it will come as no suprise to you that right after breakfast on a Monday morning, I’m already thinking of, and drooling over, and scheming on my pizza fix for later today.  I’m gonna try my hand at a new homemade recipe today – and get this – it has veggies on it so it’s all good!  It looks good anyway – see:

Mmm, Sweets! – Raspberry Tiramisu Recipe

I am now in desperate need of dessert.  I was innocently minding my own business, browsing the ‘net when I should be working on a project, and I happened to come across this Rapsberry Tiramisu recipe.  Just look at it – wouldn’t it catch your attention too?

I wasn’t even looking for sweets.  (I was however looking at food, as usual!)  And in my defense, let me also say that raspberry isn’t even one of my favorite fruits, but I’m gonna make this one for dessert this evening if I can wait that long.  Then next time I may try to sub out the raspberries for strawberries, yummmm.  So, why don’t you give this one a try and let me know what you think.  Got your own wonderful tiramisu recipe that you’d like to share?  Post it here so we can all try it out as well!  Happy snacking everyone.

Spicy Southern-Fried Chicken

Yes, I know it may be strange to be yearning for Fried Chicken at 9:00 a.m. on a Monday morning, but I’m hungry (again!) and this picture looks soooo good!  And hey, now I know what I’ll be making for dinner tonight!  If you like fried chicken as much as I do (and that may be hard) then give this recipe a try and have some good ole fashioned southern cooking for dinner tonight!

Vegetable Noodle Soup

 

Mmmm, with this cold snap we’re suffering through doesn’t a nice warm bowl of veg soup sound great?  Does to me – along with anything else that’ll keep me warm, like hot chocolate, chili, coffee – well, you get what I’m saying!  I know I shouldn’t really complain about the cold,  living in Florida now – this is certainly nothing like what I grew up with all my life in Buffalo (can we say lake effect snow people?) but I can’t help but feel just a wee bit cheated, since the reason why I moved here in the first place was to avoid real cold.  I’m used to fake cold now, but this weather is taking me back to my roots!  Oh well, I’ll whip up a nice batch of this soup and daydream about the summertime!  Check out the recipe here:
